INGREDIENTS:
1 cup walnuts, soaked for 2-8 hours
½ cup chopped carrots
2 tsp chili powder
1 tsp cumin powder
1 tsp garlic powder
1 tsp paprika
1 tsp soy sauce or tamari (optional)
fine grain sea salt, to taste
cayenne pepper, to taste (optional)
INSTRUCTIONS:
1. Combine all taco ingredients in a food processor.
2. Pulse several times until crumbly, making sure not to over-blend.
SERVE:
Serve the walnut taco meat on romaine leaves or your favorite taco shell.
OPTIONAL: Garnish with diced avocado, slice mango, halved tomatoes, parsley or cilantro, ground pepper, and lime juice.
